About the role
This role sits with the inflight catering kitchen team at Inflight Catering Centre 2, producing airline meals at large scale. You will lead and support a big multicultural brigade, stepping in for the Executive Sous Chef when needed, and it suits experienced kitchen leaders with a strong Japanese cuisine background.
What you'll do
- Lead, train and manage kitchen staff, including rostering and deployment
- Promote teamwork within the kitchen
- Read menu specifications, work out raw material needs, plan production schedules and assign tasks
- Update specifications and work instructions when menus change, in line with airline requirements
- Plan and produce meals to client requests, making decisions when the Executive Sous Chef is away
- Prepare Japanese dishes and their variations, including presentation
