About the role

Join the Breakfast Room kitchen team at a luxury hotel in Singapore, supporting the senior chefs in running daily production for an all-day dining restaurant. You will help keep food quality consistent, manage food costing, and guide junior colleagues on the line. This role suits an experienced kitchen professional with a culinary qualification who is comfortable in a high-volume hotel environment.

What you'll do

Support the Junior Sous Chef, Sous Chef and Chef de Cuisine with daily production and presentation for the all-day dining restaurant
Monitor and delegate duties to junior kitchen colleagues
Control food costing while maintaining or improving quality
Follow HACCP policies and procedures within the hotel
Keep work stations clean and hygienic and maintain equipment
Prepare all food items for a la carte, buffet and festive menus consistently according to hotel recipes and standards
Receive and safely store food ingredients, check stock quality and quantity, and resolve discrepancies
Give directives to junior colleagues in line with hotel brand standards to support productivity
Build and maintain effective working relationships with colleagues
Assist in all kitchen activities and briefings so guests receive high quality food promptly
Prepare salads, fruits, seafood, poultry, farinaceous dishes and sauces for all meal periods
Attend and take part in scheduled training sessions
Communicate daily with service staff about guest feedback
Provide professional, friendly and proactive guest service while supporting fellow colleagues

Requirements

Diploma or vocational certificate in Culinary Skills or a related field
At least 3 years of related experience in full service restaurants or local or international hotels
Experience in a high volume kitchen
Able to follow HACCP policies and procedures
Able to prepare salads, fruits, seafood, poultry, farinaceous dishes and sauces
Able to communicate effectively with service staff and colleagues
