About the role

This role oversees daily restaurant operations at a Marina Bay Sands outlet, leading a team of captains, cashiers, hosts and service attendants. You will work closely with the Assistant General Manager and General Manager to keep service standards high and meet the outlet's financial and service goals. It suits an experienced F&B manager from a five-star hotel or deluxe restaurant background.

Help plan, coordinate and manage staff and services so restaurant operations run smoothly and service standards are upheld
Lead a team of Captains, Cashiers, Hosts and Service Attendants
Develop and implement operating procedures and standards
Manage and develop staff, and liaise with executive management on short and long term goals
Support the General Manager in achieving the outlet's financial, service and related goals
Deputize for the Assistant General Manager and General Manager when they are absent
Work alongside staff in service and food preparation to cut wastage and raise productivity and efficiency
Review operating results with the team and find ways to improve performance
Monitor cashiering procedures for compliance with accounting standards, and keep wastage and labour productivity ratios in check
Inspect table set-ups and check the restaurant's cleanliness and neatness against standards
Check that food items are set in proper quantities and to hotel standards
Review the reservation book, pre-assign designated tables and follow up on special requests
Check that enough food menus and wine lists are available and in good condition for each meal period
Anticipate busy periods and organise procedures for long waiting lines, seeking support from other outlets where needed
Run pre-shift meetings with staff and review information relevant to the day's business
Handle guest comments, requests and complaints promptly and professionally, taking personal responsibility for resolving issues
Supervise, mentor, train, schedule and evaluate staff, and prepare and deliver staff reviews
Build a work environment that encourages teamwork, performance feedback, recognition, mutual respect and staff satisfaction
Monitor guest reactions and confer with service staff or captains to ensure guest satisfaction
Manage HR duties for the department, including hiring, training, succession planning, policy and legal compliance
Maintain staff files
Deliver reviews, discipline, staff awards, flex days, payroll and SRFs
Approve schedules and flex day requests for all restaurant staff
Coordinate staff training as required
Coordinate inventories and order food and beverage products, supplies and equipment
Maintain guest profiles daily and take appropriate action
Hold daily pre-shift meetings and departmental meetings as needed
