About the role
This role supports the bar operation at a large integrated resort in Marina Bay, working alongside the General Manager and bar team to run a high-volume beverage outlet. It suits an experienced bar or restaurant manager who is comfortable with financial targets, VIP service standards and leading a team.
Create promotional activities that lift revenue and guest activity
Back divisional and resort-wide programmes and promotions
Manage beverage costs, operating expenses, stock levels and payroll
Deliver top service to VIP guests in outlets and at special events
Track performance of direct reports and hold managers to standards
Build financial, business and capital expenditure plans aligned to the property's strategy
Enforce high hygiene and sanitation standards across bar areas
Keep close contact with other departments to understand their operations
Recommend hiring, promotion and development of team members
Support the General Manager's objectives through proactive outlet management
Work with the team on service and drink preparation to cut wastage and raise productivity, and review results to find improvements
Ensure cashiering follows accounting standards
Reduce consumable wastage and maintain labour productivity ratios
Protect prescribed profit margins
Check bar cleanliness and tidiness regularly against standards
Watch guest reactions and check in with service staff or captains on satisfaction
Handle guest comments, requests and complaints promptly and professionally, taking ownership of resolutions
Carry out HR duties for the department, including building a teamwork-focused environment, performance feedback, recognition, respect, employee satisfaction, quality hiring, training and succession planning, diversity commitment, and policy and legal compliance
Coordinate staff training as needed
Coordinate stock counts and order food and beverage products, supplies and equipment
Join daily pre-shift and departmental meetings with the GM or Bar Manager

Requirements
Certificate or Diploma in Restaurant/Bar Management, or extensive F&B experience
At least 7 years at managerial level in a 5-star hotel or deluxe restaurant
Fluent in English; additional languages an advantage
Strong knowledge of beverages, their preparation and service
Willing to work any day and any shift
