About the role
This is a 24-month talent programme at Marina Bay Sands for people starting out in pastry and bakery. You will rotate through central production, fine-dining pastry, banquet operations and creative development, working with experienced chefs. It suits someone early in their career who wants to grow into a junior leadership role.
Observe and record pastry and bakery production workflows across outlets
Learn food safety and compliance documentation such as FSM, HACCP and ISO22000
Support logistics and distribution so items reach outlets on time
Help with basic admin for production planning and quality control
Prepare dough, batter, filling and icing for breads, pastries and desserts
Finish cakes, tarts and plated desserts
Operate large-scale equipment like mixers, ovens and proofers safely
Keep quality and consistency in high-volume production
Follow hygiene and food safety standards on every shift
Apply recipe costing and menu engineering
Manage stock and inventory using the EATEC system
Learn scheduling and procurement through Ariba and Virtual Roster
Keep recipe databases updated with measurements and allergen details
Help analyse cost reports and spot efficiency improvements
Prepare pastry items for large-scale events to presentation standards
Coordinate with banquet teams on timing and service flow
Build dessert buffets and plated presentations for VIP events
Handle dietary requests and guest customisations
Keep production logs and post-event analysis reports
Work with R&D chefs on creative pastry projects from concept to execution
Develop new recipes and presentation styles that match brand standards
Scale new concepts for high-volume production across outlets
Run tasting sessions and collect feedback for refinement
Prepare documentation for recipe costing and operational feasibility

Requirements
Diploma or degree in any discipline, or in your final year of study and able to start work after graduating
Less than 2 years of full-time work experience
