This role supports the Outlet Chef in running daily culinary operations for a buffet outlet serving local and Western cuisine at Singapore Marriott Tang Plaza Hotel. You will help keep food production consistent and high quality while maintaining kitchen efficiency and a safe, well-coordinated workplace. It suits experienced culinary professionals ready to lead by example and uphold brand standards.

What you'll do

Support the Outlet Chef in managing kitchen operations to keep them smooth, profitable and efficient
Uphold culinary concepts, plating standards and presentation guidelines
Maintain controls over food preparation, inventory, requisitioning, food pars and waste reduction
Ensure accurate weekly forecasting for business volumes to support staffing and production planning
Contribute to departmental budget targets through cost management
Enforce proper food handling including labelling, storage and rotation
Ensure compliance with food hygiene and sanitation regulations
Conduct monthly sanitation inspections using required checklists
Maintain a safe working environment and report hazards promptly
Provide training, mentorship and daily supervision to the culinary team
Support training programs including daily 15-Minute Training
Promote teamwork and a positive kitchen culture
Assist in coaching, counselling and performance management
Ensure accurate scheduling and timekeeping oversight
Promote compliance with SOPs and operational guidelines
Contribute to improving standards and workflows
Support implementation of the annual Culinary Balanced Scorecard
Conduct monthly preventive maintenance checks
Foster communication with other departments
Ensure culinary offerings meet guest expectations
Support execution of special events and menu changes
Carry out any other duties as assigned
