About the role

Lead the daily kitchen operations at Osteria Mozza, keeping service smooth and the food consistently up to standard. You will run the pass, guide the kitchen brigade, and work closely with the Executive or Head Chef on menu execution. This suits an experienced culinary professional ready to take on a management role in a similar dining concept.

What you'll do

Oversee day-to-day kitchen operations for smooth and consistent service
Supervise all kitchen sections, controlling quality, timing and coordination
Take charge of the pass during service and keep communication clear
Uphold culinary standards so every dish meets quality and presentation benchmarks
Apply cooking techniques, processes and equipment correctly and safely

Lead, mentor and develop the kitchen brigade

Manage training manuals, SOPs and training efforts

Identify and nurture high-potential team members for succession planning

Set expectations and maintain discipline, professionalism and respect

Maintain consistency in food quality, portioning and presentation

Handle premium ingredients properly and minimise wastage

Keep recipes, costing and related documentation accurate and current

Collaborate with the Executive or Head Chef on menu execution and seasonal changes

Oversee inventory management, procurement and stock control

Manage kitchen costs through waste management and portion control

Monitor food cost, labour efficiency and operational metrics

Support scheduling, rostering and administrative duties

Enforce food hygiene, sanitation and safety regulations

Keep the kitchen clean, organised and audit-ready

Good to know

Shift hours, weekends and public holidays required
Training manuals and SOPs used for team development
External training sponsorship and education assistance available

Requirements

At least 4–6 years of progressive culinary experience
At least 1 year in a management role, ideally in a similar dining concept
Strong command of multiple cooking techniques, including pizza, pasta, grilling and sauce work
Knowledge of ingredient-driven cuisine
Positive, resilient and able to learn quickly in a fast-paced kitchen
Strong commitment to hygiene and food safety
